Small Chops: Plantain-Fonio Kebab Recipe

Fonio is a West African grain that is known for being both delicious and nutritious. Often referred to as a “super grain,” its characteristics make it a standout among its cousins - rice and couscous. The gluten-free and nutrient-rich grain is also a star in the kitchen because of its versatility since it can be cooked, fried, or baked.  So, when we paired it with plantain to make kebabs, the outcome was undeniably delicious! 

This plantain and Fonio dish is the perfect addition to any summer picnic or barbecue. Try the recipe using Yolele Fonio - a product by Chef Pierre Thiam

Ingredients:

  • 2 Plantains

  • 1/2 cup of Fonio

  • 1 1/2 cup of Oil

  • 1 cup of water

  • Salt and optional seasonings

  • Vegetables ( suggested one of each: bell peppers, onions, tomatoes)



Steps:

  • Cook Fonio per instructions on packaging.

  • Peel ripe plantain and cut into small pieces.  Mash it up until smooth and add Yolele Fonio (any flavor).  Mix till Fonio is evenly distributed in plantain.  (Optional - add seasoning of your choice.).

  • Heat oil and drop 1 tsp amount of plantain and Fonio mix into oil.  Fry until brown, then take out and let cool.

  • Cut assorted vegetables (eg. bell peppers, onion, tomatoes) and place Plantain-Fonio with vegetables on skewers.
